Winter savory is the perennial herb cousin to summer savory, with thicker, shinier leaves. It has a bit more pungent flavor than summer savory: spicy and peppery with piney undertones and a mix of thyme, mint, and marjoram. It’s a perfect seasoning for savory dishes like beans, meats, soups, and stuffings. It’s an exceptional pollinator plant with tiny purple flowers that bloom in mid-summer, which bees and other pollinators adore.
